This delicious panna cotta is made with elderflower syrup and tea. You can taste the tea in the cream and is therefore only subtly present, but just enough for that delicious, special taste. Are you curious? Try it now!
Ingredients
- 340 ml whipped cream
- 500 grams full-fat yoghurt
- 50 ml elderflower syrup
- 4 sheets of gelatine
- 110 grams sugar
- 1 teaspoon vanilla
- 2 tablespoons tea leaves of 2 bags Fresh Blend
Garnish
- 400 grams apricots
- Handful of ripe cherries
- 2 tablespoons sugar
- 2 tablespoons honey
- Fresh Blend tea
Instructions
- Put the whipped cream in a saucepan with the sugar, the elderflower syrup and the tea leaves of Fresh Blend (or 2 bags). Let this heat up slowly until the sugar has melted. The longer it is allowed to steep, the stronger the tea flavour will become.
- Put the gelatine sheets in cold water to soak.
- Strain out the pieces of tea and dissolve the squeezed gelatine in the warm liquid. Stir it well.
- Add the yoghurt and vanilla and pour into the prepared molds. If you put it in a mold, make sure there are holes at the bottom with sticker on it. This makes it easier to turn over when serving. If you do not want to turn it around, put the pudding for the panna cotta in a nice glass. (See the picture).
- Place in the refrigerator and let it set in for at least 4 hours. But preferably overnight).
To serve
- Clean the fruit and remove the seeds. Put this in a large bowl with the honey and sugar (you can use only honey or only sugar, or both) and pour the hot tea over it. Leave it for a while. The fruit will soften lightly
- Transfer the fruit to a blender and add some of the liquid. Blend until desired smoothness. If it is too thick, you can add more of the liquid.
- Invert the panna cotta molds on a plate and serve with the fruit puree.
