This sauce combines the smoky flavour of lapsang souchong tea with the spiciness of ginger, creating a unique and flavourful sauce that is perfect for finishing various dishes, such as grilled vegetables, chicken or tofu.
Ingredients
- 1 cup of water
- 2 tablespoons China Smokyla Lapsang Souchong
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons brown sugar
- 1 tablespoon freshly grated ginger
- 2 cloves of garlic, finely chopped
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch (optional, for thickening)
- Salt and pepper to taste
Instructions
- Bring the water to the boil and add the lapsang souchong tea. Allow the tea to steep for about 5 minutes to get a strong flavour. Remove the tea bags or strain out the loose tea.
- In a small sauce pan over medium-high heat, combine the tea, soy sauce, rice vinegar, brown sugar, ginger, garlic and sesame oil. Stir well to combine all ingredients.
- Simmer the sauce on low heat for about 10-15 minutes to allow the flavours to mix well. Taste the sauce and add salt and pepper to taste.
- If you want a thicker sauce, you can make a porridge of 1 teaspoon of cornstarch and 1 tablespoon of water. Add this porridge to the sauce and stir well until the sauce thickens.
- Remove the sauce from the heat and let it cool for a few minutes before using it.
