This sauce combines the smoky flavour of lapsang souchong tea with the spiciness of ginger, creating a unique and flavourful sauce that is perfect for finishing various dishes, such as grilled vegetables, chicken or tofu.

Ingredients

  • 1 cup of water
  • 2 tablespoons China Smokyla Lapsang Souchong
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon freshly grated ginger
  • 2 cloves of garlic, finely chopped
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch (optional, for thickening)
  • Salt and pepper to taste

Instructions

  1. Bring the water to the boil and add the lapsang souchong tea. Allow the tea to steep for about 5 minutes to get a strong flavour. Remove the tea bags or strain out the loose tea.
  2. In a small sauce pan over medium-high heat, combine the tea, soy sauce, rice vinegar, brown sugar, ginger, garlic and sesame oil. Stir well to combine all ingredients.
  3. Simmer the sauce on low heat for about 10-15 minutes to allow the flavours to mix well. Taste the sauce and add salt and pepper to taste.
  4. If you want a thicker sauce, you can make a porridge of 1 teaspoon of cornstarch and 1 tablespoon of water. Add this porridge to the sauce and stir well until the sauce thickens.
  5. Remove the sauce from the heat and let it cool for a few minutes before using it.
  6. This ginger sauce with lapsang souchong tea is now ready to serve with your favourite dishes. Enjoy!
